Chef Pete
A traditional western meal using local ingredients evokes a deep connection to the land and its heritage. With every forkful, you can taste the rich history of the region, where each dish is a testament to the skill of local farmers and ranchers. Chef Pete takes pride in producing food that is delicious, nourishing, and produces a sense of gratitude for the surrounding landscape and its people.
Chef Pete List is a leader in the restaurant industry – defined by his culinary pursuits and old west resilience. As a Colorado native, Chef Pete embarked on his culinary journey at the tender age of nine, learning the ropes alongside his mother. This early exposure instilled in him a deep-seated passion for the craft of cooking, which set the stage for his future and guided him down a vibrant culinary path.
Chef Pete has made a name for himself across a spectrum of diverse restaurants. From French fine-dining, to Mexican Nuevo, and Mediterranean-inspired cuisine, Chef Pete has been earning the trust and admiration of discerning patrons around the country.
Pete’s heart is tethered to the rugged beauty of Colorado, a place where his creativity can flourish by sourcing some of the finest local ingredients. From foraging wild mushrooms and growing his own vegetables and microgreens, Chef Pete pushes culinary boundaries through the utilization of local his landscape.
In 2020, Chef Pete led the Snow Bowl kitchen on a mission to provide free dinners to laid-off hospitality and industry employees due to the COVID-19 Pandemic, and to community members who could not afford a daily hot meal. Over 77 days, 21,698 meals were served and over $47,000 raised.
